Vanilla Crescents
Ingredients
Vanilla Crescents
- 120 grams almonds
- 250 grams flour
- 200 grams butter
- 80 grams powder sugar
- 2 egg yolk
- For coating: powdered sugar mixed with a pinch of ground vanilla or with vanilla sugar.
Preparation Steps
Hey there, chef! Let's make some magic with this recipe. For the best results, try to stick to the steps and ingredients list like glue. Think of it like a science experiment – weird substitutions might make things go *boom* (and not in the tasty way). 😉
Vanilla Crescents
-
First, grind the almonds into a fine, sandy meal. Pulse in a food processor until finely ground, stopping before it turns pasty. If the almonds feel warm, let the meal cool before using.
-
Bring all the ingredients together into a smooth, non-sticky dough. Wrap in plastic wrap and chill in the refrigerator for at least 1 hour, or overnight.
-
Preheat the oven to 350°F. Line 2 baking sheets with parchment paper. In a shallow bowl, mix powdered sugar with a pinch of ground vanilla or vanilla sugar for coating.
-
Shape small crescents from the dough and place them on the lined baking sheet. The size and exact curve are up to you. For even pieces, you can weigh each bit of dough, or divide the dough into several portions and make the same number of crescents from each portion.
-
Bake for about 12-15 minutes at 350°F, until just lightly golden at the edges. Let the crescents cool off little. While warm, not hot, roll them in the vanilla powdered sugar to coat. Once completely cool, place in an airtight box and let them rest, ideally overnight, for the best tender texture. Handle gently because they are fragile when warm.
