I bake these peanut butter cookies when I want something cozy and fast. In Czech kitchens we did not make them, but I discovered them later and now I love the salty sweet flavor. The dough mixes in minutes, the cookies bake quickly, and they come out soft in the middle with lightly crisp edges. I like to fold in a few chopped roasted peanuts for extra crunch and sprinkle a little sugar on top. Let them cool just a bit, then enjoy with milk or coffee. Simple, friendly, and always a hit.
Ingredients
Peanut Butter Cookies
- 5 tablespoon butter
- 1/4 cup peanut butter 100%
- 2/3 cup brown sugar
- 1/3 cup sugar
- 1 egg
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon corn starch
- 1/2 cup roasted salted peanuts
- 1/2 cup chocolate chips
Preparation Steps
Hey there, chef! Let's make some magic with this recipe. For the best results, try to stick to the steps and ingredients list like glue. Think of it like a science experiment – weird substitutions might make things go *boom* (and not in the tasty way). 😉
Peanut Butter Cookies
-
In a stand mixer with the paddle, beat slightly softened butter, peanut butter, and both sugars (brown and granulated) on medium speed until light and creamy, about 2 to 3 minutes. Scrape the bowl.
-
Add the egg and beat until well combined.
-
Mix in the flour, baking soda, salt, and cornstarch until just combined.
-
Fold in the peanuts and chocolate chips.
-
Cover and chill the dough in the refrigerator while you preheat the oven to 180°C or 350°F.
-
Divide the dough into 12 portions, roll into balls, and place on a baking sheet lined with parchment.
-
Bake for 10 minutes, then let the cookies cool completely on the sheet.
