I make these sugar-free granola cookies when I want something simple, wholesome, and good for every day. They are naturally sweet from fruit, so there is no need for extra sugar. I like them because they are easy to mix in one bowl, and you can enjoy them for breakfast, snack, or with coffee in the afternoon. The texture is soft with little golden edges, and the cinnamon makes them smell so cozy while baking. You can also crumble them on top of yogurt, which is one of my favorite ways to serve them. - 3/4 cup coconut, unsweetened fine sherd
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- cinnamon to taste
