Creamy Green Pea Soup

This creamy green pea soup is one of my favorite recipes when I want something fresh and comforting. It’s so simple to make, but it feels a little special, you know? The peas keep their beautiful green color, and the soup gets this silky texture from the cream and ricotta. I love adding crispy bacon on top for a bit of crunch and a smoky flavor it makes the soup feel complete. You can blend it super smooth or leave a bit of texture if you like.   • 2 tablespoon butter
  • 1 onion
  • 3 cup frozen peas
  • 1 teaspoon sugar
  • 3 1/2 cup broth (chicken, beef, vegetable)
  • 1/2 cup heavy cream
  • 1/2 cup ricotta cheese
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Creamy Green Pea Soup

  1. Sauté the chopped onion in butter until it softens.


  2. Add the peas and a teaspoon of sugar, and briefly sauté. Pour in the broth and let it simmer on medium heat for about 10 minutes. Be careful not to cook it too long, as the peas could lose their natural color.


  3. Then add the cream and blend until smooth. Add the ricotta and blend again until the soup is silky and well combined.


  4. Season with salt and pepper to taste. For an extra smooth texture, you can strain the soup through a sieve, but it’s not necessary.


  5. Cook the bacon until it's crispy.
