This creamy green pea soup is one of my favorite recipes when I want something fresh and comforting. It’s so simple to make, but it feels a little special, you know? The peas keep their beautiful green color, and the soup gets this silky texture from the cream and ricotta. I love adding crispy bacon on top for a bit of crunch and a smoky flavor it makes the soup feel complete. You can blend it super smooth or leave a bit of texture if you like. - 2 tablespoon butter
- 1 onion
- 3 cup frozen peas
- 1 teaspoon sugar
- 3 1/2 cup broth (chicken, beef, vegetable)
- 1/2 cup heavy cream
- 1/2 cup ricotta cheese
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper

Creamy Green Pea Soup

Melt the butter in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent.

Add the peas and sugar, stir, and sauté for 1-2 minutes.

Pour in the broth, bring to a gentle simmer, and cook for about 10 minutes. Don’t overcook or the peas will lose their bright color.

Add the cream and blend the soup until smooth. Add the ricotta and blend again until silky.

Season with salt and pepper to taste. For an extra-smooth texture, you can strain the soup through a fine sieve (optional).
